1. Avocado, Kiwi, Spinach Fruit Salad

Avocado Kiwi Spinach Fruit

TOTAL TIME: 15 minutes or less

SERVES: 1

 INGREDIENTS:

 1/2  ripe Avocado, peeled and sliced

1-2  Kiwi fruit, peeled, and cut into cubes

2    oz baby Spinach

1/2  oz Raisins

 
DIRECTIONS:

 1.   Peel, slice and cut the avocado and kiwi into small pieces. 

 2.   Toss all ingredients in a salad bowl.

 3.   Optionally add a very small amount of any light salad vinaigrette or dressing.

2. Kale Salad

 Kale Carrots Almonds Craisins

TOTAL TIME: 15 minutes or less

SERVES: 2 or 3

INGREDIENTS:

1    Large Kale

4    Carrots

1/2  cup Craisins (dried cranberries)

 1    cup Edamame

 1/2  cup Almonds

1/4  cup Balsamic Vinegar (use more if needed)

 

DIRECTIONS:

 1.   Wash the kale and carrots. Remove kale from the stalk.

 2.   Chop up the leaves and carrots.

 3.   Crush the almonds into coarse pieces.

 4.   Boil the Edamame for 5 minutes (if needed). Do not shell.

 5.   Mix the craisins, carrots, edamame, almonds and

     Balsamic vinegar in a salad bowl.

3. Shredded Brussel Sprouts Salad

 Brussels Crasins Avocado

TOTAL TIME:  25 minutes or less

SERVES: 1 or 2

INGREDIENTS:

1     pound Brussels Sprouts

1/2  cup dried Cranberries

1     ripe Avocado, peeled and sliced

1/4  cup shredded Parmesan cheese

Lemon Vinaigrette Dressing:

2    tablespoon fresh Lemon Juice

6    tablespoon extra virgin Olive Oil

     salt and freshly cracked black pepper

 
DIRECTIONS:

 1.   Shred the Brussels sprouts with a sharp knife.

 2.   Toss Brussels sprouts with the dried cranberries, avocado, and Parmesan cheese.

 3.   Whisk together the lemon juice, olive oil, and season with salt and pepper.

     Drizzle the Brussels with the lemon vinaigrette and season with salt and pepper

     per your taste preferences.

 4. Mixed Kale, Berry Salad

 Blueberry Carrots Goji Kale Salad

 

TOTAL TIME: 25 minutes or less

SERVES: 1 (about 7 oz serving)

INGREDIENTS:

2     cups chopped Kale

2     tablespoons Goji berry

1/8  cup fresh Blueberries

1/8  cup Carrots, raw, 1/8 cup, grated

1     tablespoon unsalted Sunflower Seeds

1     tablespoon hulled Cashew Nuts

4    cherry red ripe Tomatoes

 

Dressing:

1-3  tablespoons extra virgin Olive Oil

2     tablespoons Acai Berry Juice

  

DIRECTIONS:

 
1.   Grate the carrots

 2.   Mix and toss all ingredients in a salad bowl

 3.   Add dressing per your taste preferences.

5. Super Vegetable Salad

 
Tomatoe Celery Grapes Avocado Super Veggy Salad

 
TOTAL TIME: 30 minutes or less

SERVES: 1 (large)

INGREDIENTS:

 2    cups Earthbound Farm Fresh Herb Salad (Organic)

1    tablespoon whole black Chia seed (raw, organic)

1    Lemon Juice (1/4 tea spoon)

2    large raw stalks of Celery

1    teaspoon black pepper

1/2  cup Garbanzo beans

4    Tomatoes

2    oz Grapes (about 10 grapes - any type(s))

1/2  of an Avocado (Haas)

1    oz Peas and/or diced radishes

1/4  Carrot (shredded)

1/3  Cucumber (cut into small slices)

1    oz thinly sliced or chopped Red Onion

 

Dressing:

1    tablespoon Olive Oil

1    teaspoon Lemon juice

DIRECTIONS:

 1.   Dice the celery into small pieces

 2.   Quarter the tomatoes or cut into smaller pieces

 3.   Cut the avocado into smaller pieces

 4.   Rinse and drain the garbanzo beans  

 5.   Toss all ingredients in a salad bowl
